I prepped this take-with-me morning meal more than 12 hours ago. My mason jar is filled with oats, soy yogurt, almond milk, chia seeds, 1/2 banana with peanut butter,  a handful of crunchy pecans and a drizzle of maple syrup (please don’t judge me). I’ll have a ton of these breakfast-in-a-jar recipes for you very soon,  they’ll give your mornings an amazing symphony of textures.

The best thing about them is they can be made ahead of time. Oh yes, and you probably won’t feel hungry until lunch. What’s not to love about that?

Recipe:

  • ¼ cup old fashioned oats
  • 3 tablespoons soy yogurt
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • ¾ cup unsweetened almond milk
  • A splash of vanilla
  • ½ ripe banana, sliced
  • 1 tbsp natural peanut butter
  • 1 tsp maple syrup
  • A small handful of pecans, toasted
INSTRUCTIONS
  1. In a small mason jar combine oats, soy yogurt, chia seeds, almond milk, and vanilla.
  2.  Add sliced bananas and peanut butter
  3. Drizzle in maple syrup and top with pecans
  4. Refrigerate
  5.  Enjoy the next day
