This Is The Best Veggie Burger Ever, Served With A Pineapple Twist

Where should I begin with this burger? With the fact that it is really moist and delicious or that one of the best things about the recipe is that all the ingredients can be placed together in a mixing bowl without first having to sauté anything, making it the easiest burger you’ll ever make. 
In the video below you’ll see that I’m a bit of a control freak when it comes to the shape of my burgers  I like them to perfectly round with smooth sides. To get it right, all you have to do is use a 3-inch cookie cutter, but if you don’t have a cookie cutter,  get a 15-ounce can, press it into the burger,  and when you’re done, just pop the burger out of the can for a perfect mould.
This recipe will give you 8 patties. Just remember when you are popping them into the oven to line the baking sheet with parchment paper sprayed with oil. When you put the burgers on the baking sheet spray them lightly again.
1 (15oz) can of black beans, rinsed and drained (1½ cups)
1 (15oz) can of black eye peas, rinsed and drained (1½ cups)
½ cup finely chopped red bell pepper
1 cup finely chopped scallions
3 tbsps finely chopped fresh cilantro
1 tbsp plus 2 teaspoons Jamaican curry powder
1 tsp salt
¼ cup vegetable broth
2 tsps fresh lime juice
1 cup panko breadcrumbs
Olive oil for spraying or brushing the pan
8 burger buns
Preheat oven to 400⁰F.

Prepare the Burger
In a medium bowl, use a small potato masher (or strong fork)to mash the black beans and black-eyed peas. They should be good and mushy but not totally pureed, with few beans still identifiable in the mix.
Add the red pepper, scallions, cilantro, curry powder, salt, broth, and lime juice and mix well. Mix in the panko until it all holds together. Refrigerate for 10 mins or so, or until the salsa is ready.
Cook the Burgers
Line a baking sheet with parchment paper and spray or brush with oil. Form the burger mixture into 8 patties that are about 1 inch thick. Spray or brush with a little more oil and bake for 15 mins. Flip the burgers and bake for 12 to 15 mins, until nicely browned.
Serve away.
Pineapple Salsa
1/2 pineapple, diced into ¼ inch pieces
¼ cup finely diced red onion
2 tbsps chopped fresh cilantro
1 tbsp fresh lime juice
1 jalapeno, seeded and finely chopped
1 tsp agave nectar
To prepare, just mix everything together in a bowl.
